In Thailand, Tom Yum is a traditional spicy and sour soup consisting of three ingredients: lemongrass, galangal, and kaffir lime leaves.  We recreate Tom Yum’s evocative flavor by infusing arrack with a white mirepoix—onions, leeks, and mushrooms—to give the drink umami, before rounding it out with earthy notes of lemongrass, cilantro, mushroom, and kaffir lime.

If you are new to Thai cuisine, then our Tom Yum is the ideal starting place.  Starting with the mirepoix-infused arrack, it perfectly illustrates our goal for Volume 5: to investigate the methods of Thai cuisine through the cocktail.  The cooked umami from the mirepoix brings a flavor immediately recognizable as warm food, while the lime leaf liqueur brings an aromatic experience that towers over the palate. Altogether, this cocktail is essentially a full, round meal, but the experience is mind-bending and the mystery of the mouthfeel is addictive.
